Pineapple Salsa

•    1 cup finely chopped pineapple
•    1/4 cup minced red onion
•    1 T minced seeded jalapeño pepper

Combine all ingredients in a small bowl and stir well. Cover and chill.
Yield 1 cup (serving size 1/4 cup).
