Aioli sauce

1 T crushed garlic
1 large egg yolk
1 T Dijon mustard
salt, pepper and lemon juice to taste
1 cup extra-virgin olive oil

Crush garlic and combine in a large bowl with egg yolk, mustard and seasonings. Beat with wire whisk* while gradually adding oil. Continue until smooth and thick.

* This can also be done in a food processor.
